As an organic certified and artisan distillery we do not use 'natural' flavourings, this pastis is the result of truly distilling real organic herbs. We therefore do not use anethol, the aniseed oil that often gives pastis a sour taste. We therefore distil our star anise, cardamom and black pepper to obtain a powerful but smooth pastis. By not using anethole, it also does not turn 'milky' when you add water. Proof that we do not use anethol because an oil dissolves in alcohol but not in water.
