Schladerer Zibartle - Wild Plum Eau-de-Vie
Zibärtle is made using the rare wild Zibarte, a small, blue-yellow variety of wild plum indigenous to the Southern Black Forest that contains more stone than flesh and poses a challenge to distillers. Fermentation at a strictly controlled temperature. Repeated distillation in classic copper stills. Maturation period, first in ash wood barrels, which impart virtually no colour or flavour, then in stoneware vessels.
